Vegetable soup

Vegetable soup is one of the healthy soup in Nigeria due to the presence of vitamins and antioxidant in the vegetable leaves, although addition of too much palm oil can kill the equation.
I love to cook my vegetable soup with fresh pepper mix, this makes the vegetable taste nice, and also with cray fish and dry fish. Thiis helps in balancing the equation. The dried fish helps to kick start the aroma of the soup. All you have to do is to add it to the oil before adding the pepper mix and your neigbours will come knocking at your door (lol).

Well, I used efo Iyanapaja leaves because my dad requested for it. He had already cut the vegetables without telling me and when I saw the way He cut them I wanted to cry😭. I also added carrot because I wanted to use it to eat rice.
You can use any vegetable you like for this recipe and still get the same result or a better one.

Pepper mix (tomato & pepper puree)

Desired beef, ponmo or frozen fish

Dry fish

1 cup stock water

1 tablespoon cray fish

1 cooking spoon palm oil

1 small onions, diced

Vegetable leaves

1 tablespoon Iru (locus bean)

Salt & seasoning cubes to taste


1. Place a clean pot one medium heat, add the palm oil, add the sliced onion and sauté until almost translucent. Add the crayfish, dry fish and iru and fry for a few seconds; then add the pepper mix and fry well.

2. Once fried, add stock,salt and seasoning cube to taste

3.Add the meats, ponmo etc. Cook the sauce until thick; then stir in the vegetable. Check for seasonings and add more if needed

4.Cook for about 3 minutes and serve with swallow, rice or pasta.

1. I learnt some people first soften the vegetable with hot water before cooking, well I do not consider it a good choice because most of the vitamins in the vegetables would have died, yes I mean died, so you might end up eating leaves without any nutrient in them.

2. Please do not over cook your vegetable, the process of cooking the vegetable has already removed a number of vitamins from the leaves how much more when over cook them, you'll be left with empty leaves too. That is why I advice juicing your vegetables to cooking them if you want to get the best nutrients out of them.

3. Try as much as possible to finish the soup that same day if not you'll only be eating empty leaves the following day.
